This couscous salad is loaded with feta cheese, pecans, pomegranates and a touch of mint. A quick and easy¬†couscous salad that’s great for a lunchbox or to serve with cold chicken.

I love pomegranates, but I’ve often wondered if they’re worth all the hassle and mess. Usually when I seed a pomegranate, I end up with red juice splattered all over the kitchen. Needless to say, I was thrilled to discover a method for removing pomegranate seeds quickly and with less mess.
