I have been craving my Aunt Rhoda’s (Rho Rho) yummy brownies for weeks so yesterday I decided that I had to make a batch. They’re really so easy to make and they come out perfectly every time. They are not too sweet and sort of cake like, perfect with a cup of coffee or a glass of milk. Ironically while I was stirring the melting sugar, butter and #chocolate over boiling water it reminded me of just how special the person who gave me the recipe is.
Rho Rho married my mom’s brother Mike. Uncle Mike became a brilliant surgeon and founded his own hospital in Rancocas, New Jersey. My aunt raised their three daughters, volunteered her services to charitable organizations, entertained regularly, did not know the meaning of the word no and always looked stunning and still does at 90. She is the type of person who you can talk with about anything and everything and she will always be open and honest with you. In high school when we were asked to write about what woman we admired most, all of the other girls in my class were writing about Jackie Kennedy. Not me. I wrote about Rhoda Abrams the woman who had all of the qualities that I hoped to have someday. I hope I have made her proud of me. Since my mother passed away in 1987 she has been so much more that just an aunt to me.
Rho Rho’s Brownies
Melt butter, chocolate and sugar in double boiler. Cool, then add eggs, and remaining ingredients. Pour into 9 x 13 pan and bake in 350 F oven for 25-30 minutes or until a toothpick inserted in center comes out clean. Allow to cool in pan on cooling rack. Cut into 24 squares.
