Essentially a dried fruit, pepper is a key part of the history of spice trading. Black pepper is made from fermented and dried green pepper berries while white pepper is made from soaked and skinned dried red berries. This favorite spice is produced primarily in Vietnam, Malaysia, Brazil, India and Indonesia.
This spice is added to nearly every dish without even thinking about it. It has a fruity fragrance with a hot, pungent flavor. It can lose its flavor rapidly after grinding so it should be stored as whole peppercorns and ground as needed.
